1 cup chopped spinach
6 strips of bacon chopped
1/4 cup feta cheese
Dash of salt, pepper, garlic and onion powder.
Beat all together
Spray egg bite mold (found on amazon see ad below this post) with nonstick cooking spray. Put one cup of water in instant pot.
Place egg mold, empty on instant pot tivet. Pour mixture in egg mold, each vessel to brim. Place trivet with egg mold inside instant pot. Place lid on and ensure it is set to seal mode. Cook on high pressure for 8 minutes with quick release.
Remove from instant pot, let cool and enjoy!
The egg bites keep for 3-4 days in the fridge and can last up to 6 months frozen.
